UVI Cochades is one of the best Colombian coffees we've brought to the cupping table. Grown and processed on the slopes of the Columbian Andes, beans are hand-picked beans and allowed to ferment for 4-5 days before depulping. It encourages a more complex acidity and beautiful depth in flavors, with sweetly citric blood oranges, delicate peach tea, and warm ginger molasses cookie flavors that bloom with a well-measured medium roast. This is a perfectly balanced, indulgent cup of premium Colombian coffee from a new generation of specialty producers in one of the best regions in the world.

  • First introduced by Jesuit priests, Columbia has been growing coffee since the early 1800s. Today, it’s the third highest coffee-producing nation in the world.
  • Colombian coffee is known for its high quality due to its ideal climate, fertile soils, and unique growing conditions. Typically farmed at high altitudes, Colombian coffee experiences a slower maturation process and produces sweeter, brighter beans.
  • In Colombia, Arabica coffee is king. We take great pride in sourcing and roasting only the finest arabica beans from the best growers, with a small batch roasting process that ensures every bean is roasted to perfection.
  • Precise roasting allows the unique flavor profile of each coffee to shine through without muddling complex layers of flavor.

WHAT TO EXPECT

UVI Cochades embodies the best of washed Colombian coffees. Deliciously well-balanced, brightly acidic, and full of body, it’s a distinctive cup for coffee lovers at any stage. A medium roast is the perfect fit for these beans, highlighting citrus notes and drawing out the delicate layers of peach and tea flavors. Indulgent and sweet, ginger molasses cookies emerge at higher temperatures, without bitterness that comes from over roasting. BLIND ASSESSMENT

Spice-toned, balanced, crisply sweet. Baking spices, caramel, lily, almond, orange zest in aroma and cup. Crisp, sweet structure with bright acidity; smooth, satiny mouthfeel. Almond notes lead in the finish, supported by caramel and orange zest.

Brewing Methods for UVI Cochadas, Columbia Coffee and Ratios:

Espresso - For Single Origins

  • Dose In: 20 grams of coffee
  • Dose Out: 60 Gram (Aiming for a 1:2 Ratio)
  • Overall Time: 35 Seconds (7 seconds pre-infusion and 28 Seconds Extraction)
  • Pre-infusion: 7 seconds at 1-2 bar of pressure
  • Extraction: 28 seconds at 9 bar of pressure
  • Water Temperature: 200f (93c)

Pour Over

  • 0.06 grams of coffee per 1 ml of water (Ex. 30 grams of coffee for 500 ml cup)
  • 200 f (93c) degree filtered water
  • Semi coarse grind (similar to sea salt), Dose a little heavy, grind coarser - it really brings out the nuance in the coffee
  • 4-minute brew time
