Peach l Floral l Juicy
This is a grade 1 washed heirloom coffee from the Guji zone of Ethiopia. Of all the washed coffees we have cupped this year from Guji we feel that this one best represents this amazing region. A combination of high altitude, fertile soil, consistent and plentiful rainfall contribute to the exceptional quality of Guji coffees. The indigenous ‘heirloom’ varietals which grow wild in Ethiopia are responsible for the unique flavor notes which make for an unusual but beautifully refined cup, characterized by strong citric acidity, sweet chocolate and floral/herbal notes of peach, white grape, and bergamot.
THE WET PROCESS METHOD
Ripe cherries are delivered to the wet mill for careful sorting and pulping, before fermentation for 36-48 hours. The wet parchment coffee is thoroughly washed and sorted by bean density before being dried in the sun on raised African beds for 12 - 15 days. Once the coffee has dried to the right level it is transported to the dry mill in Addis Ababa where it is bagged and exported.
