This coffee is close to home. The Selva Negra comes from our good, local friends at Beanealogy. Their generational, family owned farm is growing some amazing Nicaraguan coffee. The Selva Negra Natural, specifically, is their experimental natural process coffee. Our thoughts - it's wonderful. Our Head Roaster, Josh Puckett, describes it as a Jolly Rancher fruit bomb.
This coffee was specifically picked and separated from the rest of the coffees in order to create a unique micro-lot. Processed as a Full-Natural, sun-dried in the full cherry (skins and fruit), on raised beds over a 6-8 weeks time period. This slow drying process allows the coffee beans to absorb an abundance of flavors and sweetness. This is one of cleanest and sweetest natural processed coffees we have ever tasted!
Selva Negra farms are focused on sustainability by providing fair wages to the producers, as well as, growing and processing the coffee with resource conservation. They utilize tree shading to best mature the coffee cherries. All water used to process the coffee is reused to create methane gas, and pulp waste is composted.
